What radiator size do you need for a custom water cooling loop?

The working rule is 120 mm of radiator per component you are cooling, plus 120 mm of headroom. A CPU-only loop is happy on a 240 or a 280. A CPU and a single GPU want 360 mm minimum, and 420 or 480 if the parts are high-wattage or you want the fans to stay slow. The bigger determinant is usually not heat capacity but noise: a larger radiator moves the same heat at a lower fan speed, which is the actual reason most people build loops in the first place.

Can a mid-tower case fit a 420 mm radiator?
